Pizza Dough

Ingredients

  • 1.5 Cups Water
  • 1.5 tablespoons Sugar
  • 1 tablespoon Kosher Salt
  • 2 teaspoons Yeast active dry yeast
  • 3 tablespoons Olive oil
  • 3 cups Bread flour

Instructions

  1. Water needs to be tempered water (105 degrees)
  2. Add sugar, olive oil, salt and yeast to water
  3. Stir and let set for 5 minutes so yeast can activate. Will see foam on top of water
  4. Add flour and mix. Suggest wearing nitrate gloves,.
  5. Dust flour on work space, after mixing transfer dough to work surface and kneed dough.
  6. Sprinkle flour on dough if it’s sticking to gloves.
  7. After kneeling hood, add a little olive oil to bottom of bowl and set dough in bowl.
  8. Cover with damp towel and let rise for an hour. Dough should double in size
  9. Remove dough from bowl and cut in 4ths. Sprinkle with some flour and work into ball
  10. Put 4 balls in cookie sheet cover and put in frid for 4 hours, min. Can leave over night
  11. When ready to make pizza remove from refrigerator and work doe into 12 to 14 inch pie.
