Pizza Dough - Detroit style

Ingredients

  • 1 cup Lukewarm water plus two Table spoons (water)
  • 1 teaspoon Quick-rise active dry yeast Normal yeast will also work.
  • 2 1/2 cups Flour
  • 1 teaspoon Salt I use Garlic salt for extra flavor
  • 1 teaspoon Red pepper flakes optinal for extra zing
  • 1 teaspoon Italian seasoning optinal mixed into the jar of pizza sauce
  • 1/2 jar Pizza Sauce More or less to your liking. I add 1 teaspoon to jar of pizza sauce for more flavor

Instructions

  2. 1. make dough; stir all ingredients together in a bowl or stand mixer. Knead for several minutes until the dough is smooth and elastic
  3. 2. First rise; Place in a well-greased bowl, turning once in the bowl to coat in oil, Then cover and allow to rise for 2 hours (do not skimp on rising time.
  4. 3. Press into Pan; Oil the bottom and sides of a pizza pan*. Stretch dough into pan(s). Cover and rest for 15 minutes, to allow the gluten to relax. Without handling the dough too much, gently spread the dough all the way to the edges of the pan, poking it into the corners, in a flat even layer
  5. 4. Second rise: Rise again for one to 2 hours, or until the dough has risen about one-third the way up the pan.
  6. 5. Preheat the oven to 450 degrees F. you can place your pizza pan onto a preheated pizza stone for a crisper crust. (optional)
  7. 6. Add sauce, cheese, and toppings to your liking.
  8. 7. Bake for 15-20 minutes, or until cheese is golden and bubbly. Cool for a few minutes in the pan before slicing
