Sicilian Pizza Dough (bread machine)

Ingredients

  • 1 1/4 cups warm water 90 degrees
  • 2 tbs Extra-virgin olive oil)
  • 3 cups bread flour
  • 1 tbs sugar
  • 1 tsp salt
  • 2 tbs nonfat dry milk (powder)
  • 4 tsp vital wheat gluten
  • 2 1/4 tsp bread machine active dry yeast

Instructions

  1. Put everything in bread machine bucket according to machine instructions. Put on “dough setting” and start.
  2. When done dump out on floured cutting board. Kneed about 4 times then put in a large oiled bowl. Flip dough around to coat completely with oil. Cover with a warm damp towel. Set in warm place to let rise. Allow 1 hour.
  3. On a floured surface flip dough out of bowl. Cut in half.
  4. If you like thick crust, Shape into pizza rounds and cover with warm damp towel for 30 min.
  5. Put on sauce and your toppings and bake at 425 degrees until cheese is melted or to your liking.
