Grilled Pizza Dough

Ingredients

  • 1 envelope Active Dry Yeast
  • 1 teaspoon Sugar
  • 1 1/4 cups Water warm
  • 3 1/2 cups Flour unbleached
  • 1 1/2 teaspoon Salt course
  • 1/4 cup Extra virgin olive oil

Instructions

  1. Combine the yeast, sugar, and water i a small bowl and stir to mix. After 5 to 10 min., the mixture should lookk foamy. Place the flour and salt int he bowl of a food processor fitted with a dough blade and pulse to mix. Add the yeast mixture and 2 T of olive oil and run the machine in short bursts too obtain a smooth, soft dough. It should bemoist but not sticky. If necessary add moreflour 1 spoonful at a time, running the machine between addtions, until the dough is the proper texture.
  2. Turn the dough out onto a work surface and knead by hand for a few min. Lightly coat a large bowl wiht the renaining oil. Cover the bowl with plastic wrap and let the dough rise in a warm spot until doubled in bulk. 1 to 1 1/2 hours.
  3. Punch down the dough, and let rise until doubled in bulk again, 1 hour.
  4. Meanwhile, prepare the toppings.
  5. Generously oil 2 rimmed baking sheets. Place half the dough on each sheet and stretch them out to form 9 x 13 rectangles.
