Pizza Dough Recipe
Ingredients
- 1 cup water 105 - 110 degrees
- 1 tsp dry yeast - do NOT use instant or quick rise
- 1 1/2 cups COLD water - should be < 50 degrees
- 3 tsp sugar
- 3 tsp sea salt
- 1/4 cup olive oil
- 7 cups high gluten flour (more or less depending on the moisture level)
Instructions
- Heat 1 cup water to 105 - 100 degrees. Add yeast and stir until dissolved. Add sugar and stir until dissolved. Add the 1 cup cold water. Add enough flour to make a batter and beat or mix for at least 1 minute and let sit for at least 30 minutes. Add the salt and oil and mix until well blended. Add the remaining flour gradually and knead until dough is hard and elastic and springs back when you press on it with your finger. This can take as few as 4-5 mins with a mixer and a dough hook or 20 mins if done by hand.
- Cut the dough in half and place each half in an oiled quart size ziplock bag and leave in the fridge undisturbed for 2-5 days until it’s doubled in size. You can pull it out and it will rise quickly if you get impatient, but it will take at LEAST 2 days at 45 degrees.
- Each piece will make 1 16“ pizza.
